50g coconut oil
1 tablespoon molasses/30g
20g coconut sugar
80g dates (pitted) chopped
3 medium over ripe bananas (mashed)
1/2 cup milk
2 eggs (lightly whisked)
40g plain flour
265g self raising flour
1/2cup shredded coconut
1 teaspoon cinnamon
Preheat oven to 180°C.
Place molasses, sugar, coconut oil and dates in a saucepan and cook over low heat, stirring continuously until butter has melted and dates are soft. Remove from heat and allow to cool slightly
Sift flours and cinnamon in a bowl and stir through coconut.
Once butter has melted and ingredients in pan have slightly cooled add the mashed banana, milk then stir in the eggs and finally fold through the flour until just combined.
Pour into greased and lined loaf tin
Cook for about 45-50 minutes or until skewer comes out clean.
Allow to rest in pan for 5 minutes then place on wire rack to cool completely.
