    Chia and coconut breakfast trifle

    1/3 cup chia seeds (white or black)

    400g coconut cream (lite)

    Your favourite fresh fruit to serve – we used mango (with a squeeze of lime), raspberries and blueberries.

    Place the chia seeds and the coconut cream in a bowl, stir to combine, cover and leave overnight.
    The chia seeds will expand overnight.

    Place into bowls, add a little extra coconut cream (or water), top with your favourite fruit and enjoy a delicious and nutritious breakfast.

    My 8 mth old daughter loves this for breakfast especially with mango.
